At least getting a good piece of Guanciale and a quality Parmigiano is always the starting point for me.<\/p>\n\n\n\n<!--more-->\n\n\n\n<ul class=\"wp-block-list\">\n<li>250g Spaghetti (or Linguine)<\/li>\n\n\n\n<li>100g Guanciale (or Pancetta, but remove parts with herbs, they become bitter)<\/li>\n\n\n\n<li>40g Pecorino Romano (or Sardo, or Parmigiano)<\/li>\n\n\n\n<li>80g Parmigiano Reggiano (or Grana)<\/li>\n\n\n\n<li>1 Egg and 1 Egg Yolk (ein Ei und ein Eigelb)<\/li>\n\n\n\n<li>25 Black Peppercorns (1g, a third of a Table Spoon, to taste)<\/li>\n<\/ul>\n\n\n\n<p>For Carbonara, I cook my Spaghetti all the way. But if you like them al-dente that&#8217;s fine, too.<\/p>\n\n\n\n<p>In the meantime, dry-roast peppercorns gently, then crush in mortar. I like the pepper a little more on the coarse side. Then do the Gunaciale thing in a sauteuse to render the fat.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p>Now there are two options. <\/p>\n\n\n\n<p>You use a pasta pot with sieve insert? How about the bain-marie style.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"768\" height=\"1024\" src=\"https:\/\/jonasstienen.de\/wordpress\/wp-content\/uploads\/2025\/11\/PXL_20251111_1134570752-768x1024.jpg\" alt=\"\" class=\"wp-image-477\" srcset=\"http:\/\/jonasstienen.de\/wordpress\/wp-content\/uploads\/2025\/11\/PXL_20251111_1134570752-768x1024.jpg 768w, http:\/\/jonasstienen.de\/wordpress\/wp-content\/uploads\/2025\/11\/PXL_20251111_1134570752-225x300.jpg 225w, http:\/\/jonasstienen.de\/wordpress\/wp-content\/uploads\/2025\/11\/PXL_20251111_1134570752-1152x1536.jpg 1152w, http:\/\/jonasstienen.de\/wordpress\/wp-content\/uploads\/2025\/11\/PXL_20251111_1134570752-1536x2048.jpg 1536w, http:\/\/jonasstienen.de\/wordpress\/wp-content\/uploads\/2025\/11\/PXL_20251111_1134570752.jpg 1920w\" sizes=\"auto, (max-width: 768px) 100vw, 768px\" \/><\/figure>\n\n\n\n<p>In a large metal mixing bowl, add grated cheese, pepper and some hot pasta water and not-too-hot fat of the Guanciale, make a paste. Take out the sieve with the Spaghetti and add the pasta to the mixing bowl. Make sure to leave the hot water in the pot to make a bain-marie (Wasserbad) with the mixing bowl, which is placed on top of the pot. This way, you can finish off the pasta dish in the mixing bowl by adding the egg, and some more pasta water if necessary. The bain-marie will gently heat the bowl but can hardly overheat, so eggs won&#8217;t stick. Sauteuse it is.<\/p>\n\n\n\n<p>Putting together the grated cheese, pepper and pasta water in a mixing bowl to make a paste still makes sense, but you will have to finish off the dish in the sauteuse. Know your tools, use a thermometer to minimize risk of sticky eggs. Again, a bit of a struggle if served for four.
